The Essence of Food: A Chef’s Philosophy on Gratitude and Life

The Deep Meaning of Gratitude at a Seoul Tuna Omakase

I find myself saying "Thank you" dozens of times a day. While "Gamsahamnida" is the common polite phrase, I often pause to reflect on the deeper, native Korean word for being grateful: "Gomapda."

The Etymology of "Gomapda": Welcoming the Divine

It is said that the word "Gomapda" originates from the combination of "Go" (meaning high) and "Mapda" (meaning to welcome or meet). In essence, it means "to welcome that which is high." It is a reverent confession that one sees the vastness of the sky or a sense of divinity in the person sitting across from them.

Once you grasp this meaning, the dining table set before you feels extraordinary. The food in the bowl is not just a commodity purchased with money at a market.

The Universe on Your Plate: From Sea to Table

A meal begins with the heat of the sun, the embrace of the earth, and the rhythmic swaying of the wild sea. Within it lies the grand phenomenon of life—the blowing wind and the cycle of seasons. It is the condensation of the farmer's sweat, the fisherman's desperate hope as they pull the nets, and the hard work of countless people who brought these ingredients to my door.

We have filled this table with the world's gratitude. For that, we are thankful.

Therefore, a dining table is "life" itself. To sustain my life, another life has passed away.

Seeing you enjoy your meal is our greatest joy.

We often try to reduce food to dry terms like nutrients or calories. We seek out what is fattier or more stimulating, treating food merely as a means to fill our bodies. But viewing another life only through the lens of calories might be a form of exploitation of nature.

A true meal is a "natural" table—one without excessive greed. It is an honest meal that does not mask its essence with forced techniques.

Gold Tuna customer visit review, handwritten feedback, heartfelt appreciation

A review written by hand. Thank you so much to our dear customer.

To show complete courtesy to the life that was given for me—that is the rightful attitude of one who holds a knife and stands before a cutting board. The time of the universe is contained in a single dish, and that heavy weight of life has finally reached me.

I refine that life with care and place it on the table to welcome the "highest you" sitting before me. This is the "gratitude" of one who handles life.
